Meal Plan for October 10-16


Wednesday, October 10

Pasta and lentil Balls *Can sub spaghetti squash Wednesday's are a little busy around here with Playschool, dance, and two yoga classes for me in the evening, so a quick supper is essential! I made lentil balls two days ago and omgoodness they are so good. (Side note: I added them to my salad yesterday for lunch otherwise I would have been hungry an hour later, and they were perfect, so these are versatile and don't need to just be for spaghetti and "neat balls") Here is the recipe I used for the lentil balls: https://www.wellplated.com/lentil-meatballs/ Like I said, I made these two days ago and I have them in my freezer. The recipe made a lot which is great. This is one of those recipes that I would make when you have some extra time on your hands (which shouldn't be too hard to find, right??) and then use when needed on a busy night. Going to steam broccoli and cauliflower and add some butter for a veggie because my kids are enjoying that right now, and time depending, have a salad.



Thursday, October 11 Breakfast for supper

Eggs scrambled with spinach and cheese, homemade hash browns (sweet potato, baby potatoes, and carrots) Simple supper tonight, even though I love being in the kitchen, I also appreciate an easy meal and clean up!

Sunday, October 14 Smashed Potatoes and Crispy Lentils with Kale caesar salad and pumpkin seeds

I love smashed potatoes and have made them from Angela Lidden’s Oh She Glows Everyday Cookbok but this looks like a good recipe too with the lentils and sauce.



Monday, October 15

Curry night with Lentil balls.

I love curry so much these days. It’s such a great way to eat veggies and whole grains - either rice or quinoa. Our go to veggies are broccoli, cauliflower, peppers, zucchini, onion, and muchrooms. My girls love these lentil balls too which is a huge plus! They don’t eat curry (yet), they say it’s too spicy, so I take some veggies out before I make the curry sauce and they just have rice/quinoa, veggies and lentil balls with some Tamari sauce.



Tuesday, October 16

Pizza and Salad

Flatbread veggie pizza’s with a salad full of cukes, tomatoes, shredded carrots, and pumpkin seeds. Kid tip: My girls don’t like big chunks of veggies on their pizza so it’s worth the time to chop up peppers, mushrooms, onions, spinach, extra small and then they won’t be picking it off!
