Vegetarian Taco Salad


Ingredients

1 head Romain lettuce

1/2 can black beans, rinsed and drained

1/2 can lentils (or full can black beans if you prefer), rinsed and drained

Homemade taco seasoning (below)

Can of corn, or corn from 1-2 ears of corn, cooked

3-4 diced roma tomato

2 avocado, diced

1-2 cups tortilla chips, whole, or broken

avocado lime dressing (below)

Optional: shredded cheddar cheese


Homemade taco seasoning:

1 Tbsp. Chili Powder

1/4 tsp. Garlic Powder

1/4 tsp. Onion Powder

1/4 tsp. Crushed Red Pepper Flakes

1/4 tsp. Dried Oregano

1/2 tsp. Paprika1

1/2 tsp. Ground Cumin

1 tsp. Sea Salt

1 tsp. Black Pepper (optional)


Avocado Lime Dressing:

1 Avocado

Juice of 1 Lime

1 TBSP Extra Virgin Olive Oil

4 TBSP Water

1 TBSP Vegan Mayonnaise

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

Salt and Pepper to taste


Add all ingredients to your high powered blender and blend until smooth



Directions:

1. Wash and chop your romaine, add to bowl

2. heat your black beans and lentils in frying pan on low with a few TBSP of water and a few TBSP of your taco seasoning then add to bowl along with corn.

3. Chop your tomatoes and avocado and add to salad

4. You can either break your tortilla chips up into small chunks, or keep them whole and add to outside of salad

5. Dress with avocado lime dressing
