Taco Salad

This salad is super filling and can be adjusted to your own taste and ingredient preferences. Feel free to add bell peppers, red onion, or other beans!

Ingredients: 1-2 heads Romaine Lettuce 10 Cherry Tomatoes 1 Can Black Beans, rinsed + drained 2 Avocados, diced 1 cup corn Handful of tortilla Chips, crushed 1/2 cup shredded cheddar Cheese, optional (can substitute vegan cheese)

Directions: 1. Wash, spin and chop romaine lettuce, add to salad bowl.  2. Wash and dice tomatoes, add to salad.  3. Rinsed your canned black beans, drain as much as possible, then add to salad bowl 4. Slice your avocados in half, remove pit, dice, and scoop out, add to salad 5. Either use frozen corn, and warm up in a saucepan with water, or use a can of corn and rinse and drain, then add to salad.  6. Crush tortilla chips and grate cheese, if using, then add both to salad.  7. Prepare the dressing, mix into salad and enjoy! 

Dressing: 1/2 cup sour cream (can use vegan sour cream or plain greek yogurt) 1/2 cup medium or mild salsa 1 tbsp taco seasoning

Blend ingredients in a blender, add to salad.
