My Go-to Garden Salad with Oil-Free Honey Dijon Salad Dressing

Salads don't need to be a side dish, they can be filling when you add the right ingredients and be the main course. 

This is one of my favourite ways to make a filling salad, you can adjust and add in (or take out) whatever you have on hand and suits your tastes!

Ingredients: 1 head romaine lettuce, or 3-4 handfuls of spring mix lettuce 1/2 English cucumber 1 cup cherry tomatoes 1 small/medium carrot, washed and shredded 1 beet, cut julienne 1 cup pumpkin seeds 1/2 cup pistachios 1 avocado, diced

Oil free Honey Dijon Dressing: 1/2 cup white wine vinegar 2 tbsp dijon mustard 1.5 tablespoons honey 1 clove garlic, minced 1/4 cup vegetable broth or water salt and pepper

Directions: Wash and cut your romaine or spring mix, be sure to use a salad spinner to dry it, this is important for the salad dressing to stick. Add it to a large serving bowl Cut your cucumber and tomatoes, add to bowl Shred your carrot and julienne your beet, add to salad. Add in your pumpkin seeds and pistachios.  Toss to combine and then add in your diced avocado, dressing, and serve. 

Prepare your dressing by adding all ingredients to a blender and blend for a few seconds until combined then add 2 tbsp at a time to your salad until you have enough on for your tastes.  Refrigerate the remaining dressing. 

Notes: You can use kale or spinach for this salad as well.  Other vegetables you may want to include: broccoli florets, cauliflower, roasted butternut squash. If you don't have pumpkin seeds then try sunflower seeds If you don't have pistachios, try slivered almonds
