Meal Plan - November 21 - 27

This week I am going to try a few different "bowl" recipes. I really like these types of meals because a few little switches can completely change the flavours and meal. I find they are usually fairly kid friendly too!

Wednesday, November 21

Deconstructed Taco Bowl Ingredients Rice or Quinoa 2 or 3 Bell peppers 3 portobello mushrooms

Taco seasoning 1 can lentils or could use a package of ground round

Canned or frozen corn


2 or 3 avocados 1 lime 2 cloves garlic, minced Diced cherry tomatoes (optional)


Instructions Cook either Rice or Quinoa for the base. Fry peppers, and mushrooms in some oil and cook about 5 minutes until softened. Add taco seasoning, lentils and corn. Make your guacamole

Add rice to bowl, top with your peppers, mushrooms and lentils. Add a scoop of guacamole and salsa. Enjoy!
