Meal Plan - January 7-13



Feels good to be in a new year! I love a fresh start and being in a routine with meal planning and exercise.

Monday, January 7

Loaded Sweet Potato Fries

Ingredients:

3 Sweet potatoes, cut into fries or wedges

avocado oil

garlic, salt and pepper, and any other spices you like on your fries 1 can black beans, rinsed and drained Salsa, or chopped baby tomatoes

Guacamole

Vegan Garlic Chili Aoli drizzled across


Vegan Garlic Chili Aoli 1/2 cup vegan mayo 2 cloves garlic Juice from 1/2 of a lemon

Salt and pepper 1-2 tsp chili powder


Directions:

Preheat your oven to 375 degree F

Chop your potatoes, add them to a bowl with some avocado oil and your spices.

Spread them out on your parchment paper covered pan

Roast your sweet potato fries for 30 minutes, flipping them halfway.

Meanwhile, rinse and drain your black beans, set aside in bowl

Prepare your guacamole and chop your tomatoes, or use salsa Prepare your vegan garlic chili aoli by combining all ingredients in a bowl and mixing.


Once your potatoes are done, add them to a large serving plate, add your black beans, gauc, and salsa, and drizzle with your aoli. We will serve this with a garden salad.


Tuesday, January 8

Vegan Meatball Sub Sandwiches Use this recipe for the lentil balls 1-2 cups of tomato sauce 2 handfuls spinach, chopped

Hoagie buns

Optional: shredded mozzarella or cheddar cheese Side Salad


Directions:

Make your lentil balls according to recipe Heat your tomato sauce in a pan, once it's heated, add chopped spinach. When your spinach has wilted, add the lentil balls, being carful not to break them up when mixing. If using cheese, shred it. Could toast your bun if you want to be fancy. Assemble your subs with your lentil balls in sauce, sprinkle with cheese and more spinach if desired.


Wednesday, January 9

Taco Salad


Ingredients Romain lettuce 1/2 can black beans, rinsed and drained

1/2 can lentils (or full can black beans if you prefer), rinsed and drained

Homemade taco seasoning (below)

Can of corn, or corn from 1-2 ears of corn, cooked

chopped tomato chopped avocado

tortilla chips, whole, or broken avocado lime dressing (below) Optional: shredded cheddar cheese


Homemade taco seasoning:

1 Tbsp. Chili Powder

1/4 tsp. Garlic Powder

1/4 tsp. Onion Powder

1/4 tsp. Crushed Red Pepper Flakes

1/4 tsp. Dried Oregano

1/2 tsp. Paprika1

1/2 tsp. Ground Cumin

1 tsp. Sea Salt

1 tsp. Black Pepper (optional)


Avocado Lime Dressing:

1 Avocado

Juice of 1 Lime

1 TBSP Extra Virgin Olive Oil

4 TBSP Water

1 TBSP Vegan Mayonnaise

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

Salt and Pepper to tast

Add all ingredients to your high powered blender and blend until smooth


Directions: Wash and chop your romaine, add to bowl

heat your black beans and lentils in frying pan on low with a few TBSP of water and your taco seasoning then add to lettuce along with corn Chop your tomatoes and avocado and add to salad Could break your tortilla chips up into small chunks, or keep them whole and add to outside of salad Dress with avocado lime dressing

optional: add cheese Thursday, January 10

Potato Leek Soup Ingredients 1 onion

3 garlic cloves

2 tbsp avocado oil

5 large potatoes 3 large leeks (cut and washed individually) 3 carrots 5 celery ribs

1/2-3/4 cup lentil 8-10 cups water/broth 4 cubes vegetarian broth if you used water

salt and pepper to taste Directions

chop onion and fry in your pot with a splash of avocado oil. Add your garlic and cook for a few more minutes while you chop your carrot and celery. Add your diced carrot and celery and stir. wash and chop your potatoes and leeks, add them to pot. Let cook for a few minutes while you stir because the potatoes will stick. Add your broth, cover and let simmer for 30-45 minutes. Use your immersion blender, or add your chunks of veggies to your blender, and blend until smooth, then add back to the pot to re-warm. Add in your lentils. Season if needing more salt and pepper.

Parmasan Garlic Pasta Another recipe I can't wait to try. We are pasta lovers and this looks delicious! Ill see what I have left for veggies in the fridge, but possible a green bean dish and a Caesar salad is a must with pasta! And don't forget a glass of wine ;)
