I slacked last week and didn't get a weekly meal inspo post out so this week I was able to gather recipes for two weeks! Im excited about both of the flatbread pizzas!
Wednesday, December 5 Tonight we are going to have Lentil balls, potato wedges, and butternut squash salad. You can find the recipes below.
Lentil balls (recipe here, you know I am obsessed with this one!)
potato wedges - cut potatoes into wedges, drizzle with oil, garlic, garlic powder, and seasoning salt, bake at 400 for about 30 minutes or until soft.
butternut squash salad (recipe here, I am going to use lettuce and spinach for my salad because I am out of kale. And I am going to sub in Quinoa instead of couscous).
Thursday, December 6
Tomato sauce, mozza cheese, diced tomatoes, fresh basil, and balsamic reduction (yum!!)
Served with a salad, either garden or leftover butternut squash salad.

Wednesday, December 12
Rice stirfry with peppers, zucchini, mushrooms, broccoli, and cauliflower Either a homemade sweet and sour sauce, or peanut sauce.
Thursday, December 13
Flatbread pizza Pesto and hummus spread over flatbread, diced artichoke hearts, mini tomatoes, and a bit of feta cheese with mozzarella cheese.

I think I will use lentils and less mushrooms for ours because my girls don’t always eat mushrooms but they love lentils.
