This soup is so tasty, easy to pull together, and something that both kids and adults will enjoy!
Ingredients 2 tbsp olive oil 1 onion 3 garlic cloves, minced 2 carrots 3 celery stalks 4 medium red potatoes 2 medium sweet potato 7-8 cups vegetable broth 1 can lentils, rinsed and drained 2 tbsp dried dill Salt and pepper
Directions Heat your oil in your pot and dice your onion.
Add to your pot and cook for 5 minutes, then add your minced garlic.
Dice your carrots and celery and add to your pot, cook for 5-10 minutes, while you are preparing your potatoes.
Scrub your potatoes (or peel), and dice, then add to pot.
Add your vegetable broth and bring to a boil then reduce to a simmer. Cook for 30 minutes, until your vegetables are soft then use your immersion blender to puree your soup.
Add your rinsed lentils and dried dill, season with salt and pepper, and serve with a crusty bread.
